Chiapas is located in the mountains of the Mexican Southwest, therefore gets chilly at night. Pack a few layers and be prepared for days in the 70's and nights in the 40's.

Quintana Roo is located on the Caribbean coast in the Northeast region of Mexico, so be prepared to pack beachwear for weather in the 70's and 80's.
